1. Preheat oven to 350ºF. Line a cupcake pan with cupcake papers.
2. In a medium bowl, whisk together the pumpkin puree, sugar, eggs, vegetable oil, and water. In another medium bowl, sift together the flour, pumpkin spice, baking soda, and salt.
3. Add the dry ingredients to the wet and stir until almost combined. Add the white chocolate chips and stir just until incorporated. Evenly distribute the muffin batter among the cupcake papers. Bake in the preheated oven until an inserted toothpick comes out clean, about 25 minutes. Set aside to cool, then enjoy!
