Organic Mixed Nut Clusters

1. Preheat oven 350F. Line a baking pan with parchment paper. Transfer nuts to prepared pan and bake until toasted, about 10 minutes. Transfer to a large bowl and set aside.

2. Melt the chocolate chips over a double boiler or in a microwave, stirring every 30 seconds until melted and combined. Set aside to cool slightly then pour over nuts. Using a spatula, stir and toss the mixture until chocolate has fully coated the nuts.

3. Scoop out clusters of chocolate-coated nuts on to prepared baking pan. Refrigerate until set, about 20 minutes.
