1. Line a baking pan with parchment paper and set aside. Wash and dry apples. Insert a wooden stick into each apple and transfer to the prepared baking sheet. Place sprinkles in a shallow bowl and set aside.
2. Melt the chocolate chunks over a double boiler or in a microwave, stirring every 30 seconds until melted and smooth. Dip each apple into the chocolate. Run a spoon over the bottom to scrape off excess chocolate. Return chocolate-dipped apples back to the parchment-lined baking pan.
3. Once apples have been dipped, press the bottom of each into sprinkles. Return to a clean sheet of parchment paper and refrigerate until chocolate has set, about 10 minutes.
