Organic, Allergen Free Pumpkin Cookies

Ingredients
  • ½ cup Artisan Kettle®Organic Semisweet Chocolate Mini Chips
  • ½ cup organic coconut oil, melted
  • ½ cup organic brown sugar
  • ⅓ cup organic pumpkin puree
  • 1 teaspoon organic vanilla extract
  • 1 ¼ cup organic gluten-free flour blend
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ teaspoon gluten-free baking powder
  • 1 ½ teaspoons organic pumpkin pie spice
Directions

1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

2. In a large bowl, stir together the coconut oil, coconut sugar, vanilla and pumpkin puree.

3. In a separate bowl, stir together the flour, baking soda, baking powder and pumpkin pie spice.

4. Stir the wet ingredients into the dry until well combined. Stir in the mini chocolate chips.

5. Roll the dough into 1-inch balls and flatten slightly. Bake for 10 minutes. Enjoy.
