Organic Allergen Free Chocolate Chunk Pumpkin Blondies (Vegan)

1. Preheat your oven to 350 degrees. In a food processor, combine the chickpeas and pumpkin puree. Blend until smooth. Add in the rest of the ingredients except for the chocolate chunks and process, making sure to scoop down the sides as needed. Fold in chocolate chunks. Taste and add additional sweetener if you have a big sweet tooth!

2. Line a 9x9 square baking pan with parchment. Pour the batter into the pan and use a spatula to smooth it out. Dot the top of the blondies with additional chocolate chunks. Bake for 25-30 minutes, or until the blondies are firm. Allow them to cool prior to cutting. Enjoy.
