1. Place the chocolate chips in a large bowl. Heat ⅔ cup cream to a simmer, then pour over the chocolate chips. Let stand for 30 seconds, then whisk together until combined and smooth. Let mixture cool for 15 minutes, whisking occasionally.
2. Combine remaining 1 cup of heavy cream, mascarpone cheese, mint extra, vanilla extract and stevia extract in a large bowl. Whip with an electric mixer on high speed until medium peaks have formed. Scoop out ½ cup of whipped cream and reserve for garnishing the finished mousse.
3. Pour half of the whipped cream into the cooled chocolate mixture and gently fold until fully incorporated. Repeat with remaining whipped cream and continue folding until fully incorporated.
4. Transfer to serving dishes. Serve immediately or refrigerate for up to 2 hours. Garnish with reserved whipped cream and mint leaves and enjoy!
