1. Place the coconut milk in a medium saucepan. Heat over medium, stirring often until it reaches a gentle boil. Remove from heat and add chocolate chips, Swerve and vanilla. Mix until fully combined and smooth. Transfer to ice cube trays and freeze until frozen, at least 4 hours.
2. Prepare the topping: Chop chocolate chips into small pieces and set aside. Combine ¾ cup heavy cream and Swerve in a mixing bowl. Whip on high speed until medium peaks have formed. Transfer to refrigerator while preparing milkshake.
3. Transfer the frozen chocolate cubes to a high-power blender. Add 1½ cups heavy cream and blend on high speed until fully combined and smooth.
4. Transfer milkshake to glasses. Top with whipped cream and sprinkle with chocolate. Serve immediately and enjoy!
