For the filling:
1. Combine peaches, brown sugar, bourbon and cornstarch in a large bowl. Stir until combined and peaches are fully coated. Transfer to a 9x13-inch baking dish. Sprinkle chocolate chips on top and set aside.
For the cobbler topping:
1. Preheat Oven to 375F. Combine flour, sugar and baking powder into a large bowl. Add the butter and “cut” into the mixture using your fingers or two knives until the mixture resembles coarse crumbs. Alternatively, use a food processor pulsing 10-12 times. Add heavy cream and stir until a stiff dough has formed.
2. Using an ice cream scoop or large spoon, drop dough by the spoonful onto the peach filling in the prepared dish. Bake for 40 to 45 minutes or until topping is golden and juices are bubbling.
3. Melt chocolate chips over a double boiler or in a microwave, stirring every 30 seconds until melted. Drizzle over cooked cobbler. Serve warm with ice cream and enjoy!
